AFIA EFERE EBOT( GOAT WHITE SOUP)

Afia efere ebot is one of the richest delicacies of the Akwa ibom and Cross river peole.
It is usually or traditionally prepared without palm oil, using goat meat or chicken meat which are the principal ingredients.
If prepared using goat meat, it is call afia efere ebot. If prepared using chicken, it is called afia efere unen. However, fresh fish can also be use.

INGREDIENTS
1Kg of Goat meat or Chicken meat.
1Medium smoked fish
250g of fresh okro.
100g of crayfish.
250g of pounded yam.
25g of chopped fresh chillies.
1Uyayak pod
Seasonings and a litre of water.

PREPARATION
Wash and cut the meat into pieces, add salt and steam for 30minutes.
Add washed fish, chopped chillies, okro and crayfish, and then break the uyayak pod and add.
Cover pot and cook for 15minutes.
Mould the pounded yam into rounds and add to thicken.
Add seasoning and allow to cook for another 5-8minutes.

FOOD IS READY

ITS PERFECT MATCH IS POUNDED YAM.
